Baked Pork Belly with Fermented Black Bean and Chili

Step 1
Rinse the red bird chilies and green chilies. Slice the chilies and garlic. Cut the leek into sections.

Step 2
Bring a pot of water to boil. Add rinsed pork belly, leek and ginger. Bring to boil with high heat then reduce to medium low heat. Cook for 15 minutes and take out the pork belly. Let cook and slice.

Step 3
Mix together the sliced pork belly, salt, sugar, light soy sauce, fermented black bean, oil and sliced garlic.

Step 4
Place evenly onto a baking tray covered with foil.

Step 5
Bake for 10 minutes on 200°C. Add red bird chilies and green chilies. Bake for another 3 minutes. Ready to serve.
