Step 1
Rinse, peel and cut the beetroot into pieces. Cut tomatoes, apples, corn and celery into pieces. Soak and rinse the cashews. Set aside.

Step 2
Bring beetroot, tomatoes, apples, corn, celery, cashews, ginger and water to boil.

Step 3
Cover the lid, reduce to medium low heat and cook for 1 hour.

Step 4
Remove the lid. Season with some salt and ready to serve.
