Thai Yellow Curry with Clam and Garlic Baguette

Step 1
Preheat an oven to 200°C. Cover a baking tray with foil.

Step 2
Slice the baguette and spread the garlic butter on it. Bake for 5 minutes or until golden brown. Set aside.

Step 3
Soak the clams in salt water for 30 minutes. Slightly smash the garlic and cut the green onion into sections.

Step 4
In a pan, add some oil on medium heat. Add garlic, onion and sauté until fragrant. Add yellow curry paste and sauté until fragrant.

Step 5
Add clams, rice wine and stir-fry for 2 minutes. Cover with lid and cook for 3 minutes or until all clams have opened.

Step 6
Add green and red chili pepper, green onion, evaporated milk and bring it to boil.

Step 7
Add egg wash and mix well. Add basil, fish sauce and mix well. Serve with garlic baguette.
