Fried Rice with Shrimp and Dried Scallop

Step 1
Season the egg white with some salt and mix well.

Step 2
In a pan, add some oil on medium heat. Add garlic, shallot, ginger and sauté until fragrant.

Step 3
Add shrimps, choy sum stems, dried scallops and stir-fry until half-cooked. Transfer to a plate and set aside.

Step 4
In the same pan, add some oil. Add leftover rice and stir-fry until the rice is separated. Add egg white and stir until the rice is coated with the egg.

Step 5
Add shrimps, choy sum stems, dried scallops and stir well. Add salt, sugar, sesame oil and stir well. Sprinkle with green onion. Ready to serve.
