Pan Fried Fish in Tomato Sauce

If you have trouble getting your kids to eat fish, you have to try this recipe. We used golden thread fins, which are white-fish. Their meat is tender and juicy and goes perfectly well with a tangy tomato sauce. To go the extra mile, you can try to fillet the fish first and make a bone-free version of this dish.

2 Golden thread fins (can find them in most hong kong wet markets)

2 tomatoes

Lots of ginger, thinly sliced

150ml of chicken broth

salt & ground black pepper to taste

1 tablespoon of corn flour, dissolve with some water

Fresh Tomatoes

Several cloves of garlic

Cut tomatoes into large pieces

    First, prepare the fish. Remove the head and fins. Leave the skin on. Marinate with some salt, grounded black pepper, and a drizzle of olive oil. Set aside for 10 minutes. Second, we prepare the tomatoes and garlic. Cut the tomatoes into medium chunks. Peel and smash the garlic. Dissolve the corn starch in some water, set aside. Now we start cooking. Heat up some olive oil in a frying pan on medium high heat. Pan fry the fish until golden on both sides. Cover the lid for 2-3 minutes to make sure the center of the fish is fully cooked. Remove from heat and place in serving plate. Make the tomato sauce. In the same frying pan, add the garlic and tomatoes. Stir fry until the garlic is aromatic. Add the chicken broth and cover the lid to simmer for 3 minutes. Remove the lid and pick out the garlic. Then add the corn starch mixture. Mix well and thicken the sauce. At this stage, season with salt & pepper to taste. Assemble the dish. To finish this dish, pour the tomato sauce on top of the fish. Garnish with some cilantro. Best to serve with rice.
