Fujian Fried Rice

Fujian fried rice is one of our favorite variety of fried rice. Unlike normal fried rice, Fujian fried rice is served with a delicious sauce. The brown sauce is made with shrimps, Chinese dried scallops, and mushrooms. The next time you make Chinese fried rice, try this unique twist with your creation.

(Makes 4 servings)

2 bowls of rice

80g of shrimps

2-3 Chou sum or Chinese broccoli stems, diced

1-2 Chinese dried scallops, soaked in water overnight, diced

1 Chinese mushroom, soaked in water overnight, diced

Some garlic, minced

Some green onions

2 eggs, beaten

Shrimp marinate

1 tablespoon of Chinese cooking wine

Some ground white pepper

Dash of salt

Brown Sauce

200ml of chicken broth

1 tablespoon of soy sauce

Thickening sauce

1 tablespoon of corn starch

Dissolve in some water (30ml)

Rice, Eggs

Other Ingredients

    1. Prepare the shrimps. Cut into small pieces (optional). Marinate for 15 minutes.

    2. In a frying pan, head up some oil on high heat. Add minced garlic and sauté with diced mushrooms. Add diced vegetables, shrimps. Saute thoroughly until fully cooked, about 3 minutes.

    3. Add brown sauce ingredients and bring to a simmer, about 2 minutes.

    4. Add thickening sauce and reduce to low heat. Set aside.

    5. In a separate pan, add beaten eggs to cook on high heat. When eggs are half cooked, add rice and mix well. Stir fry until all eggs are cooked and the grains of rice are separated. Add salt to taste.

    6. Transfer the fried rice onto a serving bowl. Pour the shrimp brown sauce over rice. Ready to serve.
