Hami-melon Mousse
Recipe Details
Mousse is a kind of refreshing cold dessert which first appeared in Paris. With a bite, you can feel it melting in a second in mouth and flow through your body with coldness. Hami-melon mousse is sweeter in taste and you just can’t help having more.

Step 1
Soak the gelatin into cold water to soften

Step 2
Mix egg yolk and sugar then beat it

Step 3
Boil milk under low heat and put in the softened gelatin.

Step 4
Add cake flour to egg yolk liquid and stir well

Step 5
Pour in boiled milk slowly and keep stirring.

Step 6
Pour the mixture into a pot and keep stirring until it becomes thickened. Take it out, cover with cling wrap and store in fridge.

Step 7
Clean and remove the seeds of hami-melon. Spoon all flesh out as balls. Make the melon peel a bowl shape for further use.

Step 8
Whip the cream and pour into and cold egg yolk mixture. Beat it to make the mousse base.

Step 9
Pour mousse base into melon peel bowl.

Step 10
Put melon balls on one by one. Garnish with few cherries. Done.
