Sautéed Spinach and Black Fungus in Sichuan Spicy Sauce

Step 1
Wash the spinach and cuts off the end

Step 2
Soak the black fungus until soft and cut into pieces

Step 3
In a pan, add about 2 tbsp oil on a medium heat. Add the Sichuan pepper and dried chili pepper and cook for about 1 minute

Step 4
Discard the peppers and leave the oil in the pan

Step 5
In the same pan, add the garlic and sauté until fragrant, then add the spinach and cook until soft about 2-3 minutes

Step 6
Add the black fungus and Chinese cooking wine, cook for 2 minutes

Step 7
Season with sugar, salt and pepper

Step 8
Drizzle with sesame oil, quick stir and ready to serve
