Braised Duck with Sour Plum and Orange

Step by Step Instructions

Step 1
Pit and mash the pickled plums. Cut half of the green onion into sections and dice the other half. Slightly smash the garlic. Zest and juice the orange. Set aside.

Step 2
Marinate duck with dark and light soy sauce and sugar for 30 minutes.

Step 3
Pan-fry the duck with Lagostina Frypan until skin is golden brown. Transfer to a plate and reserve the duck oil.

Step 4
Add about 100mL water to the frying pan and deglaze the pan. Let cook for 2 minutes and reserve the sauce.

Step 5
Add 2 tablespoon of the reserved duck oil to a 7L Lagostina Domina Vitamin Pressure Cooker and heat up on medium heat. Sauté pickled plums, ginger, green onion sections and garlic for 2 minutes until fragrant.

Step 6
Add in duck pieces, ground bean paste, orange peel and juice, rock sugar, salt and black pepper. Stir to combine. Add in the reserved sauce and enough water to cover most of the duck.

Step 7
Close the lid. Turn the operating valve to the ‘meat’ position. Cook on high heat until the pressure indicator rises and the valve starts to hiss. Reduce to low heat and cook for 20minutes.

Step 8
Release steam, remove the lid and add in corn starch solution. Cook for another 2 minutes until sauce is thickened.

Step 9
Garnish with diced green onion, orange zest and sliced red chili. Serve immediately.
